Rainbow klepon,


Ingredients: 

dough:
1 cup of gluten rice flour
2 cup water
1 tsp vanila
1 tsp salt
Pink paste food coloring
Blue paste food coloring

Fillling:
1 cup grated brown sugar 
water four boiling 

Souce:
1 cup coconut milk
1/2 cup whole milk
1/2 tsp salt
3 Pandan leas

Cook:
Step 1
Mix the flour, salt and vanila, shifted, and add slowly,  the water, mix by hand until incorporate well. By the time you can shape the dough into ball shape, and non sticky, its time to stop adding water, and set asside. Saperate into two in same ammount of dough, color each bowl, by folding it nicely until all the dough becoming pink and blue entirely. Just 1 drop of food coloring will do. Set asside.

Step 2:
Prepare a water, and heat over medium high. Start filling the dough, take 1 spoon at a time, and shape a flat circle by shaping a ball and gently press it down, not to thin, add a teaspoon of the filling, place it on the center, and start covering all the edges, and twirling it on you palm, until it shape a ball size, quickly add the ball into the boiling water. Repeat the process until the dough finish. Keep an eye on the boiling water while you repeat the process, by the time the ball start to float, its time to take it out, place them in a bowl of room temperature water.

Step 3:
Preheated souce pan over medium high, add in coconut milk, stirring it nicely, by the time it start simmering, add tge whole milk. Stirr well, add the pandan leafs and salt, stiring slowly with wooden spoon. let it cook for 10 minutes until thickening. 

Ready for plating:
Using nice glass bowl, or cup, add in the coconut milk mixture first, add the ball in, and shower it with coconut milk once again, you can add confeties like what i have in the picture. Use the sugar confeties, do not use a choclate base one. 

Serve for : 6
